This is an ~8-month old washed rind cow's milk cheese that combines traits from Gouda and Swiss Appenzeller. Delicately aged on cedar wood planks, this robust but creamy cheese has sweet bursts and distinctive eyes throughout. 

All of the milk used comes from the Gunn’s Hill family dairy farm in Aylmer, Ontario. It pairs well with white wines such as Chardonnay and Sauvignon Blanc and kombucha cocktails.
